This is a very good bean at City roast. Probably my favorite bean so far. I like it slightly more than the Kalossi, as it has a more chocolate/caramel profile.

This is my re-order of Sulawesi Toraja from The Coffee Bean Corral. The beans are consistent and exceptional. Very low acid, beautiful caramel, and rich mouthfeel roasted at City+. An exceptional bean. The checkout process was seamless and shipping was reasonable and very fast.

I absolutely love this coffee. Light roast just after the crack. It’s truly a delicious coffee & my go-to for an every day & special occasions. I’ve tried other peaberry coffees, but this by far exceeds them all in flavor.

This one's for you Cat. I've been wanting to try this for a while, and after several hiccups, was finally able to. Roasted to City +. As with the other Sulawesi coffee, Kolossi, the most prevalent flavors were spicy and nutty. Didn't taste the chocolate noted in the description. Toraja's flavors were similar to the Kolossi, just slightly more muted. Spicy, not AS spicy. CBC's description says Toraja is less "earthy" than Kolossi, and I think that's accurate. The biggest difference to me was in the area of mouthfeel. Toraja was creamier and fuller, again noted by CBC, which made it more pleasant for me. While this won't be a staple for me, it's different enough and good enough to have occasionally as a break from my daily drinker list. If you're looking for a spicy, nutty, but more chocolatey coffee, try the Bali, another Indonesian. Of the three, I prefer it the most. Thanks to CBC for such a wide variety of coffees to choose from. On a side note, gaining knowledge of the geography and history of such faraway places as Sulawesi has been very fun and rewarding.

I’ve used Sulawesi in several blends with outstanding results, the latest blended with equal parts of Costa Rican Tarrazu and the Sulawesi Toraja. Roasted to about 30 seconds past the first crack, the spicy quality of the Sulawesi and the chocolate/fruity notes of the Costa Rican coffee blend superbly. The coffee gassed out in two days. I use an OXO pour over to get optimal results.

Smooth mellow taste. It's vanilla, custard and cream. An elegant coffee and easy to roast (medium).

Got this one as part of a sampler pack and did a medium roast as that's our normal roast preference. We understand why it's called a "sleeper" on the site; made in a moka pot and as pour over, we're hooked at first cup. It's got a chocolatey, nutty smoothness that makes for pleasant drinking.

This is the best home roast that has very little chaff that roasts consistently good. It’s a bit pricy but worth it. I buy it in 10 lbs increments and drink 3-4 cups a day.

Sulawesi Toraja has been a long time favorite. Roasted at between City and City+ This ranks among the world’s finest coffee’s. The Coffee Bean Coral was quick to ship and everything was beautifully packaged. Thank you!

Absolutely love this coffee. I have had Sulawesi in the past, but I didn’t control roast. I took it about 30 seconds pass1st crack and now I’m a Sulawesi fan. Nice body and smooth finish. Really pleased.

Excellent on its own with a nutty, honey-like mildness, I’ve used the Sulawesi as a blending bean with a Guatemalan and Nicaraguan beans that produce fine coffees with unique depth and smoothness.

Review Summary:
I want to begin with a short but succinct explanation of my reaction to this special coffee bean that yields a light body combined with the low acidity resulting in a creamy texture and full-bodied flavor profile. Just after the first crack, it adds a dimension to its complexity that separates it from the pack from coffee in this region of the south-eastern highlands of Sulawesi.
Conclusion:
It is rare to see a true “wet grinding” process as evidenced by traces of mucilage that add to the fermentation process that remained on some of the beans prior to shipping. This process is less cost effective to the grower because of the extra time and process washing however the result is something special. I also enjoy its low acidity which translates into having more coffee during the day without the occasional gut rot because I drink a lot of coffee. Thanks CBC for bringing this to market.

Got a sample of this on my Halloween surprise same pack. Roasted it yesterday up until right before 2nd crack. I have never had a bean that I could ever taste tobacco in, but it shines through in this one. It’s not overpowering but you can tell it’s there, a slight vanilla tobacco. It’s not something that I would have initially bought on my own, but since it came in the sample pack I gave it a shot, and it may be one of my new favorites.

Not quite as complex as I'd hoped, I guess everything can't be Yirgacheffe... lol. Plus, I'm new to roasting, so it may also be on me a bit. Still, way better than anything that I've ever bought preroasted. I did find it to be pleasantly balanced with great nutty notes. It was good both at city for pour over and darker for espresso. I will order it again.

Wow. Just a perfect cup of coffee. I roasted just before second crack and I got buttery toffee and light nutty tobacco notes. Full body, yet velvety smooth. low acidity. I could drink this every day. I highly recommend this bean if you like a smooth creamy cup of coffee.

At this house we like light roasts, yielding 86% or so of the starting weight. These beans delivered, with a very even bean-to-bean color suggesting they were all fully ripe when picked. The really low chaff also speaks to quality processing. Top notch for taste of course but don’t look to me for cupping accolades because of all my additions: sweetener and milk.

Just when I thought I found a new favorite coffee from Coffee Bean Corral, BAM I find another one! Great, bold taste. Smooth with the slightest bite, for me. Roasted fast and hot to just before second crack. I only let it rest for 12hrs before my first taste and it was fantastic. I'm eager to see how the taste evolves as it ages.

Sulawesi is & has been my Go To coffee & CBC has done a great job in obtaining a fantastic crop! I air roast mine medium at 425F for about 16min to a nice chocolate brown which brings out the sweet, medium body I have come love about this varietal. I purchased 10# & then another 25# before the 1st shipment arrived. It will make a great gift to my coffee loving family this holiday season.

My current favorite coffee. I used to prefer Tanzanian Peaberry, but this peaberry is superior. Light, chocolate notes, brightness and boldness. I've ordered other types to compare and nothing does. It's best done at a light roast, IMO, but it will take extra long for a burr grinder to grind because these beans are hard. Its completely worth the wait.

What a delightful coffee. Glad I latched onto it. Great balance of brightness, complexity, body and finish. I prefer medium roasting, to just at the very end of the first crack. No oil showing on the beans. Two or three day rest and you're good to go. Fascinating how very different Sulawesi is from its cousin--Sumatra. Easily a top three coffee in my book, along with some of the top Kenyans. Toraja works for me more so than the other varietals. There was a HUGE improvement between one day rest and three days. One day result was 'meh'. Three was 'wow'. Patience, Grasshopper.
