For the price the quality is outstanding. It's not the highest quality of character, but being on the lower end of the price scale, this didn't just meet expectations, but exceeded them. Personal desired roast is a city+ but have gone darker and it held up nicely.

Re: Mahesh's request for roasting assistance below. While not a roasting 'expert' by any means, I've seen and read enough to be dangerous. You probably answered your own question when you stated that your 3rd roast came out better when you slowed down the roast. Beans need time to develop their flavors, especially during the Maillard Phase, where sugars are being caramelized. Rushing through the roast will cause beans to be underdeveloped and bland. I roast with an SR 800 with an extension tube, but general roasting principals are still in play no matter the equipment. I typically hit 1st crack at about 6:30-7:00 into the roast, around 410-430° on the readout. Total roast time is 9-9 1/2 minutes, finish between 450-470°, trying to stop before reaching 2nd crack. I prefer a City+-Full City roast. The biggest thing is to not stall your roast, especially during 1st or 2nd crack. Consider purchasing an extension tube. It really expands your flexibility and consistency. Don't be afraid to tweak your heat or fan speed during the roast. Different beans respond differently based on density, drying process, etc. Unfortunately, there's not a 'one size fits all' roasting profile. Received in a Colombian sample pack for 22% off with CBCs awesome 2/2/22 sale. Just a good cup of coffee. CBCs description is spot-on. Slightly bolder than the Huila Supremo. Rich, really fills your mouth. Not as chocolatey as Huila, maybe a little sweeter and nuttier. You're ready to face the day after drinking this one.

I bought a sample size of this to see how it tastes. I roasted it on SR540 - first time, it came out so well - it tasted fine - not like Sumatra. I would rate this #2.
Second time brewing, same bean, same roaster, same settings came out very under-roasted - no idea what happened (I am new to roasting - still same qty, settings can't have such a vast quality difference), 3rd time, I did the roast with much longer time and came out ok..If there are any roasting experts here, pl guide me.
My settings are mostly 0-3.30 - F6P9; 3.30 - 5.00 - F6P8; 5-6.30 - F6P7; 6.30-7.30 - F6P6; 7.30 onwards cool down. I did hear two stages of cracks - first one at around 4 minute and second at around 6.30 mts....
This is certainly a good one but not my #1.

Roasted this Medium and Medium Dark. Both are excellent but my preference with this slightly more fragile Colombian is Medium. I get wonderful flavors with medium body which makes you want to drink this coffee all day long to the last drop. It’s really good.
Roasted in my SR800 with Razzo V5 extension tube for about 10.5 minutes going through the drying out process for coffee with the extension tube.

This is a fantastic Colombian bean. I take it about 1 to 2 minutes into second crack. Very balanced, nutty, and chocolatey. Wonderful mouthfeel, very silky. Huge beans! This will be a mainstay in my house..

Roasted this two ways for a side-by-side tasting. Medium+ (late first crack) and Full City (well into 2nd crack). First crack happens at about 400 in a SR-540.
Medium was a bit to acidic for my taste but some people may prefer this, but Full City is wonderful, bold, with a good "coffee" finish.
Overall, a good bean to experiment with at different profiles. This is a keeper.

Very nice. In espresso/milk drinks a light roast gives taste of honey, medium roast gives a nice Carmel flavor and dark gives chocolate taste.

Nice large coffee beans with great flavor. I like to roast the beans to a medium dark flavor. The beans have nice, medium body with a slightly creamy mouth feel, bold acidity, and notes of sweet orange, slight nutty almond and sweet vanilla on the finish. I love Colombian coffee.

Truth is, in my 10+ years of roasting, I rarely buy Colombian coffee. I decided to snag a 5-pound bag of this when it was offered as one of "John's Favorites" in honor of CBC's owner's birthday. Since it happened to be my birthday, too, I bought it.
Now...the rest of the truth. I love it! This is a flavorful coffee roasted to full city. Lots of texture, lots of body, and plenty to be thankful for in a daily coffee. I should have bought more on sale, because I'll definitely buy more.

I'm fairly new to roasting, but I've done a couple of roasts, and this coffee has a supreme texture. If I had to describe this in one word: silk. Very smooth and velvety. That being said, it has a very mild flavor. I think this would be great for someone to use in a custom blend to add some smoothness to their coffee.

El Gato is sweet with thick mouth feel. We taste light citrus. Excellent results over a wide range of roast profiles. Air tolerant. Roasted light to medium. Nine and a half to 14 minute roast.

Roasted to full city was pretty unremarkable in flavor and body, would not buy it again. Probably at lighter roasts might show more character, but I do not like light roast. At darker roasts I suspect it would probably lose any character.
As as note to other reviewers, this coffee is from Colombia, therefore it's Colombian coffee, not Columbian.

I'm a Colombia fan and this was pretty good. I took the first roast to 2nd crack and that was too far for me. Next batch, roast went to medium and I liked it much better. It roasts fast, so keep an eye on it.

I love almost every Colombian I've tried and this El Gato is as good as any ever have been! My Hive roaster brought out some nutty, almond notes and it has a very nice body and a pleasing aftertaste.
This is a "special" bean in my book.
