This coffee is from APCAB Coop which has a total of 680 growers. APCAB coffees are known for being smooth and creamy and are Shade Grown which is a rarity in Haiti to have that kind of forest cover. The cooperative is paid roughly 300% higher wages than the Fair Trade minimum, not out of charity, but for having an exceptional product.

Roasted between 1st and 2nd crack. The green beans were clean, very very few damaged beans. The coffee was light, mild earth and floral tones. Interesting coffee. CBC shipping is quick arrived 3 days of placing order.

One minute past the first crack. The roast has good aroma, strong body and smooth, Definitely a win in my book

I like this coffee! Extremely smooth; roasted to a nice medium roast using a Gene Café roaster. Run at full heat (482 deg. F) about a 1.5 minutes past the first crack. (The very first crack you hear) Then lower the temperature to 420 deg. F for about 4 min. Let the machine go into auto cool down (COL). Let sit overnight to degas. Thank you Coffee Bean Corral for carrying such a nice product and not only that, but at such a nice price point!

Roasted to just past 1st crack. After resting 24 hours and brewing with a 30 second bloom, it felt underdeveloped. It almost had a hint of chaff in the cup, even though there was no chaff left on the beans. It’s definitely a unique cup, but I feel this one would be best as part of a blend rather than SO. I haven’t tried it as espresso yet. When I roast the next 1/2 pound, I’ll probably take it just into 2nd crack and see if that helps develop the flavor profile.

This coffee is the star in my blend, with Brazil & Honduran honey rabbit. It was my favorite coffee before I started blending.

Roasted to City Plus. Very aromatic, smooth, with hint of chocolate and sweet. Long lingering sweet aftertaste.

This was the first time in roasting, grinding, brewing, cupping (yes we did), and tasting this. We were already fans of 'Haitian Blue' and it is on our reorder list of favorites and must constantly have on hand. But this one, 'The Haitian High Elevation Blue Pine' will also be on our favorite list and reorder. It is bright and complex and yet still smooth and enjoyable. We have never really tried 'cupping' before this and not even sure if it was done correctly? But first, just the aroma, then slurpy-sipping was great. Allowed to cool and the aromas and complexity was even more pronounced. Roasted this and the 'Haitian Blue' separately both at 1/2 pounds and both medium into the second crack. We did this to compare. There is no comparison between the two! Both are unique! Both are different! Both are great! What's wrong with that? Nothing!! :) PS Impatient me of course, did this same day of roasting. Huge difference 24 and 48 after roasting! :)

Was looking for something other than my usual (and favorite) Ethiopian Yirgacheffe that also had a low acidic, citrusy profile. Was not disappointed.
